In 2018, Little C decided that he wanted to learn to cook. He had found a recipe box on our counter that held recipe cards from my Grandma, and he thought some of those recipes sounded really good.

Grandma is a very “meat and potatoes” person, and while Little C loves seafood, peanut butter and jelly (with turkey and cheese layers also, but that’s another post in itself), and spicy Mexican dishes, he also loves his meat and carbs, so these recipes were right up his alley.

For his first independent cooking task, he chose a tater tot hotdish.
With a few tweaks to the directions, he came up with this tasty dinner and we’ve had versions of it multiple times since his first attempt.

Little C started out layering all the tater tots in the bottom of the pan. He worked so hard to make the circles!

Next, he mixed ground beef (we get all of our ground beef from Denny’s Grass-fed Beef in Pekin) with mixed veggies and cream of mushroom soup.

Finally, cheese was sprinkled on top and the pan was set in the oven to bake.

Tater Tot Hotdish

An easy main dish for young chefs to prepare!

Ingredients

  • 1 pound ground beef
  • 1 package mixed vegetables, frozen
  • 1 can cream of mushroom soup
  • 1 package tater tots, frozen
  • 1 cup shredded cheese

Instructions

  • Brown ground beef in a skillet
    Steam frozen vegetables and drain
    Line the bottom of a pie pan (we use a 10-inch pan) with tater tots. 
    In a bowl, mix ground beef, steamed vegetables, and cream of mushroom soup.
    Spread this mixture on top of tater tots. Sprinkle shredded cheese on top of meat & vegetable mixture.
    Bake at 350o for 30 minutes or until tater tots are hot.

Notes
